Chinese Chicken Salad
This is one of our family favorites. And it’s pretty easy to make.

Ingredients:
- 2 pounds cooked chicken, cut into 1-inch chunks
- 2 heads lettuce, chopped up
- 1/2 cup slivered almonds
- 1-2 tablespoons toasted sesame seeds
- 1/2 teaspoons salt
- 1 teaspoon Accent (optional)
- 1/2 teaspoon pepper
- 1/2 cup olive oil
- 1 teaspoon rice vinegar
- 1 teaspoon sugar
- 1 package rice noodles
Mix the chicken, lettuce, almonds and sesame seeds together in a bowl. Then, mix the salt, pepper, Accent (if wanted), olive oil, vinegar and sugar together and pour over salad mix - then mix together.
In a large wok or pan, heat oil on high, but not to smoking. Place rice noodles into oil and let them cook until they “bloom.” This will happen rather quickly. Remove after they bloom. Crunch up and sprinkle over salad.
